🚨 Comfort meal alert 🚨
Anybody else a sucker for anything with cheese? Or noodles? We love macaroni and cheese in our house but I am always on the hunt for ways to sneak in a veggie or extra protein in somehow.
I decided to “spice up” our homemade macaroni and cheese with some bacon, broccoli and blackened chicken, and y’all, it filled all the comfort food cravings I was having.
Here’s the recipe with instructions. Try this the next time you’re trying to figure out what to do for a meal and let me know what you think!
Ingredients:
2 tablespoons of corn starch
1 teaspoon of salt
1/2 teaspoon of dry mustard
1/4 teaspoon of pepper
2 1/2 cups of milk
2 tablespoons of butter
2 cups of shredded cheese (we use a Mexican blend + sharp cheddar)
8oz of elbow macaroni cooked according to the box
1 package of your favorite bacon
1 head of broccoli
2-3 chicken breasts
Blackening seasoning (we love @heb blackening seasoning)
Directions:
Preheat oven to 375. Grease a 2 quart casserole dish using butter or a cooking spray.
Cook your bacon to your preference. We bake ours for 20-25 minutes and like it a little more crispy for crumbling purposes. Steam your broccoli or add it in with your bacon as it’s baking. As that’s cooking, sprinkle your chicken breast with desired amount of blackening seasoning. Heat a pan with olive oil and cook until internal temperature is 165.
In a medium saucepan, combine the corn starch, salt, dry mustard and pepper. Stir in the milk. Add in the butter, stirring constantly and bring mixture to a boil. Boil for 1 minute over medium-high heat. Remove from heat and stir in 1 3/4 cup of cheese until melted. Add cooked elbows, broccoli, crumbled bacon and chopped chicken and pour into your greased casserole dish. Bake uncovered for about 25 minutes until lightly browned.
